Poached egg in a nest of spaghetti and greens
Actually, last night's dinner was so good, here's a
NB - no quantities; I don't know how many you need to feed, or how hungry you are.
Put spaghetti on to boil. Meanwhile, finely chop shallots, garlic and chilli. One of each per person is about right. Those go into olive oil to sizzle gently, while you shred vast handfuls of spring greens (or other green leafy vegetable). Those go into the same pan with the lid on, to sizzle & steam with salt and pepper.
When the spaghetti's nearly al dente, break wonderfully fresh eggs into not-quite-boiling water and poach them till the whites are just set, while you slip a knob of butter into the greens.
Then the spaghetti goes into a bowl, you mix in the greens and stir that all around to make a nest, into which you nestle the eggs. Generous handfuls of freshly grated parmesan over the top, a scatter of coarse black pepper, and that's dinner - and you will not believe how good it tastes...
