It's good to smoke
May. 21st, 2010 05:07 pmToday, I have:
cold-smoked a fillet of haddock, for my kedgeree tonight;
hot-smoked a handful of large prawns, also mushrooms;
brined and then hot-smoked a herring-fillet, in lieu of actual kippering. (For actual kippering you need to be able to cold-smoke for hours, which I no can do. So then, fake kippers...)
Behold!

If you're thinking the kipper & mushrooms look a little pale, you are right. I wasn't sure how much of the wood had smoked away during the first session, and everything was very hot, so I just went with what there was. Which was mostly ash, I'm thinking. We call this a learning curve. The good news is, they taste nice regardless...
And while you're looking at pretty things, here are a couple more:

Please to observe the miracle: actually touching! Granted it's more of a keep-away than a snuggle, and they're certainly not looking at each other or anything provocative like that, but still. Touching! (That there futon was the only warm spot in the house, being d'reckly in front of the fire and all. They shared. Not exactly nicely, but they did share.)
