I wanted to make a fish pie tonight (comfort food!), despite having no milk for the sauce and no potatoes for the topping. So I poached the fish with mushrooms in a velouté made with fish stock and cream, and topped it with parsnip and celeriac mash; and y'know what? Of course you do. Best. Fish. Pie. Evar.

My fridge is almost empty. I had a bag of onions, a couple of carrots and three red chillis left by Number One Daughter, plus one chicken breast because yesterday I defrosted a pack of three accidentally when I only needed two. So we had a meal made largely of fresh air. I made curry with: onions (4 small), carrots (2 medium), chilli (1 red small), apple (i, green, slightly wizened, peeled and chopped), can of chopped tomatoes in garlic, 4 teaspoons of Jalfarezi curry paste, 1 chicken breast, chopped into very small chunks, 2 heaped tspoons of ginger marmalade. Served with basmati rice. It was deliciousand I really enjoyed making it up as I went along.
