Sep. 26th, 2010 10:02 pmI'll talk more about this later, I'm checking proofs just now and will be till bedtime, hey-ho: but my lunch today was a piece of theatre, if mac-and-cheese can be theatrical. You didn't think so? You were wrong. Picture a whole great wheel of parmesan, hollowed out by constant repetitions of La Specialite. If the dish has another name, I do not know it: but how it works, first they use a hook to gouge out yet more of the cheese, and leave it lying in the declivity there. Then a man comes with a bowl of pasta cooked with sage leaves, and a copper saucepan. He tips the pasta into the hollow cheese, and stirs it all about - and then he lights the whisky in the pan, and tips that over. And tosses, flambees the pasta in the whisky and the sage and the cheese: and that's my lunch.
