EtA: in which all bets are off

My source for hot-smoked salmon - where I saw it yesterday, but hadn't quite remembered yet that I needed it - has let me down. Is all sold out today. Will have more tomorrow, but it's a bank holiday; they don't open till ten, which is too late for breakfast.

I have come home instead with some lightly-smoked fresh salmon. Which is a wholly different beast, and I shall be making it up as I go along. Hey-ho.
