The real trouble with Thanksgiving

The real trouble with Thanksgiving (there can be only one!) is that you don't get to practice. How many times do you stuff and roast a turkey? Yup: once a year. (I shall insist on doing something more interesting for Christmas.) So you just have to get it right every time, and a year ago is too long to learn from any mistakes. There's no chance to develop the culinary equivalent of muscle-memory.

I suppose I could stuff a few chickens, between now and next year. Maybe a capon, if such can be found in the interval. Something.
