Smokers Soak In Vain...

or, Unless the Lord Scrub the Smoker, He Labours in Vain Who Scrubs It.
I love that phrase, "in vain", and almost never use it except within quotation marks; but it is fabulously appropriate tonight. It can only be vanity - in all senses - that wants the inside of a smoker clean. ("The shiny! It is disfigured by black stains! Oh noes!!")
Next time, I am so lining it with throwaway foil.
But the truly significant element of that sentence is "Next time," and the certainty thereof. The delicate perfumed smokiness of the duck was just lovely.
Also, now that I know, I shall buy some meths and use the smoker in the yard. Also, I shall use it actually to cook things rather than just to flavour them. Home-made kippers, anyone...?
