All my house is filled with the lovely scents of red cabbage braising v slowly with apple and onion and cider vinegar and sugar.

Now I'm going to go downstairs and mince lamb and lamb hearts and lamb's liver, and mix all that together with rosemary and such, perhaps another onion and a little garlic, like that; and I will form that mixture into faggots and nest them in the cabbage for a last hour's cooking. And eat same with mash.

Properly faggots are supposed to be held together with caul fat, but I no can has. Also, of course, properly faggots are made of pigmeats rather than sheepmeats, but hey. Lambstuff is what I have.

It may all come out horrid; I'll let you know if it does, but don't hold your breath. It's all good stuff going in.

Heh. Apart from the simple tedious finances, that horror of which you speak is perhaps the main reason I have not replaced kitchen or bathroom yet. In, um, thirteen years. It's not so much that I shrink myself from the horror, but what on earth would I do with the cats...?

Aww...

They were relaying tarmac in the alley directly behind my house, and I came home to find Mac absolutely frantic: scooting all through the house, round and round, hugging the walls, trying to find anywhere that didn't shake. Hiding in the cat tree is at least easier to handle...

It sounds good. My only reservation would be that the meat might be a little dry, but perhaps the lamb itself will have enough fat in it. Otherwise I would be tempted to add some bacon, if there were bacon. Which there probably isn't.

Oh, there is always bacon. My omission of it in this instance is the pig/lamb thing; it seemed wrong to go both ways at once. I coulda wrapped streaky rashers around the faggots, both to hold them together and to lubricate; but in fact the mince is quite fatty, and the cabbage-nests should be steamy, so I don't think they should go too dry. We will see. It's all learning, at this stage.

Why don't they make mutton bacon...?

They are a fine thing, faggots. And I can no longer eat them, because somehow I have managed to develop an intolerance to liver. This is not good.

Hunh? I'm so sorry - but I didn't know people did that. A small bad part of me wants to interrogate you - how can you have a liver and not be able to eat one? what happens? etc - but I am suppressing that nobly. I shall meerely note in passing, the longer I spend on LJ, the more things I discover that people can't eat. To my distress, and possibly to theirs.

And you could definitely not eat these faggots, 'cos I just checked one, and it's very livery.

I'm sure it turned out well.

Believe me, it can't be worse than what I had at an Italian restaurant the other night when I went to see the production of my play. Supposedly, they're a top-notch Italian restaurant (complete with prices). Their idea of "house salad" was iceberg lettuce with Thousand Island dressing and an olive on top. They used vegetable oil, not olive oil on the entree, mixed with margarine, not butter. The upside was that they used so much garlic I did not have to fear vampires on the journey home.

I was still sick from the glob of grease in the bottom of my stomach all day yesterday.
